MTB BRUNCH
We posted a story on Instagram, it was a picture of baked eggs. We had more messages asking for the recipe than any other post so we figured it would be cool to do a full video.

Serves 1 large adult:
- 2 tortilla wraps
- 4 eggs
- 1/2 onion
- 1 cup chopped tomatoes
- 1 garlic clove, chopped
- chopped chorizo to taste
- 1/2 bag spinach
- 4 sliced cherry tomatoes
- 1/2 avocado, sliced
- Pepper
Method:
Line a baking tray or cake tin with the two tortilla wraps. Make sure you create a “bowl” capable of containing the other ingredients.
Fry off the chorizo and onion in a dash of groundnut oil until soft and the oil from the chorizo is coating the pan.
Add the chopped tomatoes and garlic and reduce for 1-2 minutes.
Add the spinach and stir until it is wilted down substantially.
Cover the bottom of the tortilla vessel you created with the ingredients thus far and finger 4 holes for your eggs.
Add your eggs to the holes and lay your sliced cherry tomatoes and avocado on top. Finish with pepper to taste.
Bake at 180 for around 15 minutes or until the whites of the eggs are cooked.
Remove from the tray and eat!
And there you have it – a tasty and super nutritious meal to keep you going on long rides or one to look forward to while you’re out.
